A light and refreshing soup which is suitable on days when you haveĀ onĀ table a lot of strong flavored dishes. Chinese winter-melon is cooling for the body and the Chinese yam adds a sweet natural taste to the soup. I usually mash up the winter melon and mix it in the soup so that the kids will get the dietary fiber goodness from the winter melon while drinking the soup.
ABC Soup are ingredients that most kitchens will stock up on, carrots, potatoes and onions. It's easy on the palette and Singaporean kids grew up on this soup. I've been cooking this soup for my kids since they were toddlers and until now. Remember to dice the vegetables into smaller pieces for younger kids so that it is easier for them to eat.
This soup is 1 of my kids favorite soup and they can just have it with white rice. Add some lean pork while cooking and serve it with white rice and it becomes a complete meal. Lotus roots contains loads of nutritional benefits (just Google it) and is great for growing kids.
Old cucumber soup is nourishing and very sweet after hours of simmering. The dried cuttlefish makes the soup flavorful enough to skip the salt for a more healthy soup for the family.
