Asian Nourishing Lotus Root Soup

Ingredients:
2 Sections Lotus Root (Sliced)
250g Pork Ribs
3 Dried Scallops
1 Dried Cuttlefish (Cut Into Pieces)
6 Dried Red Dates (Remove The Seeds And Cut Into Halves)
1 Carrot (Chunked)
½ Teaspoon D’Palate Anchovy Powder

 

Method:

  1. Blanch pork ribs in boiling water for 3mins and rinsed with water to remove blood and scums.
  2. Add all the ingredients into a clay pot(including pork ribs), add in 6 cups of water and boil on high heat for 15mins.
  3. Turn the fire down and simmer on low heat for 2hours or more.
  4. Season to taste with salt. (Skip the salt if you are cooking for children)
