Chinese Nourishing Old Cucumber Soup
Ingredients:
250g Pork Ribs
½pc Dried Cuttlefish
1 Old Cucumber
1 Carrot Cut into Sections
4 Cups Water
6 Pitted Red Dates (cut into halves)
2 Dried Scallops
Method:
1. Wash the old cucumber and scoop out the seeds. Cut the old cucumber into sections.
2. Blanch pork ribs in boiling water for 3mins and wash thoroughly to remove scums.
3. Place all ingredients into a claypot and boil on high heat for 10mins. Reduce to low heat and simmer for 3hrs.
4. Season to taste with salt.
