Nourishing Winter-melon Soup

Ingredients:
1 Section Winter Melon (Skin and seeds removed, cut into sections)
300g Pork Bone
100g Chinese Yam (Huai shan 淮山 / San Yao 山药)
1 Carrot (Skin Removed, cut into sections)
½ Sweet Corn
6pcs Pitted Red Date (Cut into halves)
1 tablespoon Wolfberries (Goji Berries 枸杞)
½ Teaspoon D’Palate Anchovy Powder

 

Method:

  1. Blanch pork ribs in boiling water for 3mins and rinsed with water to remove blood and scums.
  2. Add all the ingredients into a clay pot(including pork ribs), add in 5 cups of water and boil on high heat for 10mins.
  3. Turn the fire down and simmer on low heat for 2hours or more.
  4. Season to taste with salt. (Skip the salt if you are cooking for children)
