Nourishing Winter-melon Soup
Ingredients:
1 Section Winter Melon (Skin and seeds removed, cut into sections)
300g Pork Bone
100g Chinese Yam (Huai shan 淮山 / San Yao 山药)
1 Carrot (Skin Removed, cut into sections)
½ Sweet Corn
6pcs Pitted Red Date (Cut into halves)
1 tablespoon Wolfberries (Goji Berries 枸杞)
½ Teaspoon D’Palate Anchovy Powder
Method:
- Blanch pork ribs in boiling water for 3mins and rinsed with water to remove blood and scums.
- Add all the ingredients into a clay pot(including pork ribs), add in 5 cups of water and boil on high heat for 10mins.
- Turn the fire down and simmer on low heat for 2hours or more.
- Season to taste with salt. (Skip the salt if you are cooking for children)
